Mexican tortillas with Cauli rice

We’ve come to the finish line of our #CauliChallenge and after cooking for an entire week with this healthy alternative, I can only say I wished I knew earlier about the nutritious qualities of Cauli rice. Not only it cuts back on the calories of a regular rice, but it is delicious too! I hope you had fun covering a few of my favourite cuisines this week. On Monday we interpreted one of my favourite risotto dishes, Cauli Rice with Greens and Mozzarella; Tuesday was all about the exotic Asian cuisine with a Chicken Red Thai Curry with Cauli rice; Wednesday we kept it simple and healthy with a Mediterranean lime Salmon with Cauli Rice; Thursday I’ve made my favourite dish with Cauli Rice, Arancini, so tasty; Friday was chicken grilled with egg fried Cauli Rice; Saturday we’ve got guests over and we made a Smocked Mackerel appetizer with Cauli Rice; On Sunday we went all Mexican with Tortillas with Cauli Rice.
